Mediterranean Orzo Salad

Hello Foodie Friends! 

Keeping the kitchen cool in the summer heat can be a challenge. Here is a great salad recipe to keep it cool! This Mediterranean-inspired salad is good for your heart, too! Quite easy to prepare and with the Greek Feta cheese, a complete meal. 

Ingredients: 

1 cup of Orzo pasta

1/2 cup of cherry tomatoes

1/3 cup fresh Italian parsley leaves

1 cup of lightly cooked broccoli

1/3 cup green pitted olives (chopped fine)

1/2 cup of Greek feta, crumbled

1/3 cup capers

1/3 cup of pickled red onion (recipe below)

Sauce/Dressing:

1/3 cup olive oil and 

2 Tbsp of freshly squeezed lemon juice 

1/2 teaspoon of salt

1/2 teaspoon of Italian herb blend

1/2 teaspoon of garlic powder


Red Pickled onion recipe: 

Prepare in advance and will keep in a sealed airtight container in the fridge for up to 4 days.

1/2 cup of red onion, chopped

1 tablespoon of Sumac

2 tablespoons of lemon juice

1/2 teaspoon of salt

Blend the above ingredients and allow them to soften for 20 minutes before serving or adding to orzo.  

For Salad: 

First, cook the Orzo as directed on the package. In another pan, steam the broccoli and put aside. Next, strain the Orzo pasta and place it in a large bowl. Next, add all ingredients listed above to the orzo pasta bowl. Finally, make sauce/dressing and pour over the salad. Mix well.

Serve cold or warm. This recipe serves 4 people generously.
